April snapshots

Hi friends! Long time no see. Thought we could catch up with some snapshots, as always. Here's what I've been up to so far in April. Mostly runs and walks, enjoying the beautiful weather, and good food. You would think that I have a lot of my time on my hands, which sometimes I feel like I do, but behind the scened I've also been working quite a lot for the newspaper and writing on the thesis. Finally starting to see the light in the tunnel!
 
 
Bought some beautiful roses for Easter.
 
 
And made donuts for the first time and had this amazing brunch with Jen, Anna and Anders. I think it might be the best brunch we have ever made, and trust me, we have enjoyed many brunches haha!: Was deliiiicious. Such a good day. Ate, drank mimosas and played Clue all day long. More days like this please!
 
 
I'll take any occasion to dress up! Here in my all time favorite dress, the Paris dress from Adoore. So glad I bought it last year.
 
 
With nicer weather comes mroe color into my wardrobe. Love this cute fluffy top!
 
 
I eat pancakes on a weekly basis as this point. Since I figured out how to make them vegan I can't have enough. The trick? Aguafaba, my friends!
 
 
Ice coffee when the sun is out is mandatory!
 
 
Another favorite food that I've had a lot lately, tofu scramble. If you season it right, there's nothing better or more savory. 
 
 
Have tried to getting back into reading. Whenever I take a thesis or work break, this is what I enjoy doing the most. Especially if the sun is out and I can work on my tan (or more like my freckles) meanwhile.

The cutest cardigan. Seriously! And so soft.
 
 
... and the coolest boiler suit. I rarely feel as fab as when I'm wearing this one. 
 
 
Made a green smoothie one day. Banana, mango, pineapple, spinach and oat milk. Pretty good actually!
 
 
My latest food obsession is toast with pea pesto. If you haven't had pea pesto, you need to try it. Super simple to make and sooo yum on toast, with veggies as a dip or with pasta. Kinda like hummus. The secret is to add lots of garlic, lemon and fresh basil. Yum!
 
 
Pink and purple might be my new favorite color combo!
 
 
The other night Jen made her incredible cookies. Nothing better!
 
 
Finished this gem yesterday! For any expat that have lived in Paris, this is the book for you, trust me! I actually felt like I wrote it myself, there are so many recognizable moments and hilarios anecdotes. Such an easy and fun read. I'm so excited for the next one, the author told me he's halfway already... Oh and YES. My Paris craving has never been stronger. If I don't miraculously find a job here in Norway or elsewhere, I might consider moving back.
